Benoît Perissé is a young very talented producer who learned to make wine from Mathias and Camille Marquet Château Lestignac, all his wines are natural and very precisely made, very low quantities, only great stuff here, The Red line in his wines are: freshness, original and not to compare with other wines from this region

Grape variety and soil: Sauvignon Blanc and Sémillon, soil argilo calcaire with limestone bedrock

Taste: Very tasty Natural white, dry and rich in it’s fruit, apricots and apples with some zest, easy going and complex lingering aftertaste with a noble biterness, not filtered or fined so cloudy

Wine pairing: gastronomic white wine, aperitif, pâtes, rich salads smoked meat or fish, fish or white meat in sauce farmer poultry, asian and spicy kitchen, ripe cheeses white or red crusted, you could drink this every day

Serving Temperature: 11-13 c , medium or big sized white wine glass type Burgundy. Open in advance or decant before drinking, drink now or keep untill 2022 cool cellar (2027)

Vinification: Natural vinification local yeast’s on concrete and stainless steel, short skin contact, riping on used oak barrels on it’s fine lies for 6-8 months, not filtered or fined cloudy wine, no sulphites added SO2 total<25mg Alcohol content: 12,5%
