Grape variety and soil: Chardonnay et Sémillon, Half of the Sémillon is’nt fully matured harvested for more freshness and low alcohol, soil argilo calcaire with limestone bedrock
Taste: Complex bouquet between fresh and ripe fruit, dry with a great acidity, minerality, peaches, pears and lemon zest, floral, almost like a natural Chablis
Wine pairing: aperitif, shellfish, springtime and summer salads, light fish dishes, vegetarian cuisine with a lot of fresh herbs, goat cheese
Serving Temperature: 11-12 c , medium sized white wine glass type Burgundy. Open in advance or decant before drinking, drink now or keep untill 2026
Vinification: Natural vinification local yeast’s on concrete and stainless steel, with the Sémillon under carbonic gas, riping on it’s fine lies for 12months, not filtered or fined cloudy wine, no sulphites added SO2 total<25mg Alcohol content: 12%
