Grape variety and soil: Chardonnay en 2 Millesimes. Soil: argilo-calcaire on a limestone bedrock
Taste: Complex bouquet between fresh and ripe fruit, dry with a great acidity, minerality, peaches, pears, lemon zest and floral. Almost like a natural Chablis. Putting the ripe 2020 together with the less ripe 2021, gives the wine more balance and freshness
Wine pairing: Aperitif, shellfish, salads, light fish dishes, vegetarian cuisine with a lot of fresh herbs and goat cheese
Serving Temperature: 11-12°C , medium sized white wine glass type Burgundy. Open in advance or decant before drinking. Drink now or keep untill 2026
Vinification: Natural vinification, local yeast’s on concrete and stainless steel, riping on it’s fine lies for 12months. Not filtered or fined so a cloudy wine. No sulphites added. Alcohol content: 12% SO2 total<25mg
