Grape variety and soil: 50% Chenin Blanc, 30% Sémillon et 20% Muscadelle. Soil: argilo-calcaire on a limestone bedrock
Taste: Sweet but also fresh, rich and complex, nice acidity, abricots and honey, white flower and nobel rot well integrated, great length with a fine bitterness
Wine pairing: Aperitif, foie gras, desserts but not to sweet, cheeses especially blue cheeses
Serving Temperature: 10-12°C , medium sized white wine glass. Open in advance or decant before drinking. Drink now or keep untill 2030+
Vinification: Natural vinification, local yeast’s on concrete and stainless steel, slow fermentation for 12 months. Not filtered or fined so a cloudy wine. very very few sulfites added. Alcohol content: 11,5% SO2 total<40mg
