Description
Bénédicte and Christophe Piat original from Switzerland fell in love with this very poetic 15th century old Bordeaux castle and reconstructed the whole Domaine, vineyards and cellar from 1994 until 1997. Converting it direct in organic farming and later biodynamic farming in 2005. Gregoire their second son is at this moment in charge of this wonderful estate and making even more effort in producing wines as natural as possible.

Grape variety and soil: 50% Sauvignon Gris 50% Sauvignon Blanc. Soil: Argilo Calcaire (Clay with Limestone)
Taste: Bone dry, fresh and pure, stone fruits like peaches with zesty lemon and a little bit of pear, fat and mineral, an ideal vin de fruit de mer
Wine pairing: Your daily white wine, Oysters and shellfish, fish, poultry and white meats, “goat” cheeses.
Serving Temperature: 11-12°C, medium sized white wine glass, drink now or keep until 2028
Vinification: Natural vinification on stainless steel tanks for 6 months on it’s fine lees, local yeasts. Not filtered or fined. low amonts of sulfites added. Alcohol content: 13,5%. SO2<70mg
