Taste: Pure and fresh, very aromatic, complex, lemon zest, passionfruit and kiwi, box, green herbs and a nice mineral touch, persitent, the best alternative for a Sancerre wine
Wine pairing: Fish and shell fish, smoked fish, white meats, vegetarian dishes and spicy food, goat cheese
Serving Temperature: 10-11 c , medium sized white wine glass. drink now until 2025
Vinification:Temperature controled natural vinification in 250 year old caves troglodytes in stainless steel tanks, local yeasts, riping on his fine lies (sediment) low in SO2< 70mg alcohol content 12,5%
