Former rugby player Jean Marc Grussaute from Camin Larredya is maybe the best vintner of the South West of France. Started in 1988 on his family Domaine and makes now the most excellent and legendary dry and sweet white wines you can imagine. The Costat Darrèr is the West part of his vineyards

Region: South West, AOC Jurancon, moelleux

Millésime: 2021

Grape variety and soil: Gros et Petit Manseng harvested between half october and half november 1/3 own grapes 2/3 bought grapes Soil, Lower hills of the Pyrénées. Soils argilo-siliceux on a bedrock of “poudingues altérés”

Taste: Fresh very fine sweetness nice high acidity, very pure and lingering, elegant with a lot of complexity. Fruits like pineapple, mango and minerals, everyone will love this

Wine pairing: Aperitif, foie gras, Roasted chicken whit raisins, brebis and roquefort cheese, lemon and lime cheese cake, just with friends

Serving Temperature: 10-11 c , medium to small sized hite wine glass. drink now untill 2028

Vinification: Whole bunch soft pressing, fermentation with local yeasts on barrels of 225 L. (5% new) and vats of 1 200 à 2500 L. temperature controlled, no malolactique fermentation. Riped for 6 months on his fine lies (sediment) low in SO2 <70 mg alcohol content 13%

Culture: Biodynamic Demeter, Organic, The Costat Darrer is made in the same way Demeter as the Camin Larredya wines only the 2017 is not yet certified.
