Grape variety and soil: 100% Sémillon. Soil: argilo calcaire with fossilised limestone bedrock
Taste: Fresh, dry but soft and pure, very fine bubbles, Yellow fruits like plums and pineapple and citrus, quit a mineral aftertaste. Not filtered so a little bit cloudy
Wine pairing: Aperitif, with friends, all occasions,
Serving Temperature: 10°C, medium sized white wine glass or Champagne flûte. Drink now or keep untill 2025+
Vinification: Natural vinification, local yeast’s on concrete and stainless steel, Maceration for 60 days on the skins, Ancestral method with degorgement and racking for 6 months.Not filtered or fined. No sulfites added. Alcohol content: 10,5% SO2 total<30mg
