Julien et Sophie Ilbert from Combel la Serre are operating this quality estate of 22 hecatares from Cahors with a lot of precision and love, very regular high quality!

Region: AOC, Cahors

Millésime: 2016

Grape variety and soil: 100% Malbec (auxerrois) Soil, Argilo Calcaire (Clay with Limestone) on limestone rock

Taste: Rich, powerful and complex wine, plums, cherries and dark chocolat, great minerality, great fine tannins, elegance and length

Wine pairing: With this big wine, red meats “côte de boeuf” and venison, stews, duck, rich gastronomical oriental kitchenmushrooms, and ripe cheese

Serving Temperature: 16-17 c, Big sized red wine glass type Burgundy Bordeaux. decant 2-4 hours in advance. Drink now until 2026-2031

Vinification: Natural vinification long extraction fermentation and maturation for 18-24 months on oak barrels “tonneau” of 600 liters, local yeasts low in sulphite <30mg/l alcohol content: 13%
