Grape variety and soil: 70% Sauvignon Blanc 30% Sémillon. Soil: Argilo Calcaire (Clay with limestone)
Taste: Pure and fresh styled wine, with white fruits like citrus, apples, white berries, fresh cut herbs and box leaves. Nice body and acidity and minerality
Wine pairing: Aperitif, shellfish and light fish dishes, smoked fish, goat cheese
Serving Temperature: 10-12°C , medium sized white wine glass, drink now untill 2026
Vinification: Harvesting the grapes at maximum ripeness, soaking on their skins for 30 hours, pressing and thermo regulated fermentation at 14°C for 22 days on stainless steel. Maturing on the lie (fine sediment) with regular bâtonnage (stirring) no added sulfites after the fermentation, Alcohol content:13,5%
