Grape variety and soil: 100% Sauvignon Blanc, soil argilo calcaire with limestone bedrock
Taste: a-typical Sauvignon Blanc; rich nose, complex, dry and oxidative in style like a great Sherry but than more fresh in fruit, pears and apples, spices like some cloves and ground ginger. Very juicy and powerful in taste, spicy and great acidity and lenght with a little bit of tannin
Wine pairing: aperitif with some nice tapas, spicy oriental kitchen, fish, chicken and poultry, saffron dishes, ripened cheeses
Serving Temperature: 12c , medium or big sized white wine glass type Bordeaux/Burgundy. Open in advance or decant before drinking, drink now or keep untill 2028+
Vinification: Natural vinification local yeast’s on concrete and stainless steel, riping on used big oak barrels not filtered or fined, no sulphites added SO2 total<25mg Alcohol content: 13%
