Benoît Perissé is a young very talented producer who learned to make wine from Mathias and Camille Marquet Château Lestignac, all his wines are natural and very precisely made, very low quantities, only great stuff here, The Red line in his wines are: freshness, original and not to compare with other wines from this region

Grape variety and soil: 100% Grappu*, very rare local grape and also difficult to find in Jancis Robinson’s book (WINE GRAPES) under the name Bouchalès , soil argilo calcaire with limestone bedrock
Taste: Very different in wine style, light ruby in color and aromatic with black cherry’s en berry’s fresh and pure, almost with a nice fine “Italian” acidity, juicy black fruits, low tannin, like a combination between a nice Beaujolais and great dry and still Lambrusco
Wine pairing: Summer salads, fish, white meats, tomato dishes, like quiche and pasta’s, very gastronomical on warm summer days
Serving Temperature: 12-14 c , medium or big sized red wine glass type Burgundy. Open in advance, some natural carbonic gaz is left in the wine when poured in your glass, (It is’nt a sparkling wine this gaz protects the wine against oxydation), No cork but a Crowncap, drink now or keep untill 2024
Vinification: Natural vinification local yeast’s on concrete and stainless steel, riping not filtered or fined, no sulphites added SO2 total<25mg Alcohol content: 12,5%
Culture: Natural and Biodynamic, no certification
*Grappu is a forgotten grape variety, because of it’s relative high acidity and low alcohol but with the climate change it will be a great aromatic variety for the futur Benoît is one of the only vinters who uses this variety as a mono cépage, normaly it’s blended with merlot to give ist some more freshness
