Grape variety and soil: 100% Roussanne. Argilo Calcaire, Limestone, and rocky soils, north face ot the small Alpilles mountain range
Taste: total finesse, ripe white peaches and apricots, sarriette and sage, roasted almonds, turned earth and red lentils, concentration and great powerful acidity, complexe and fine, very long mineral (wet stones) aftertaste
Wine pairing: fine fish dishes, monkfish, lobster, Lapin a la Provencal and veal in sage sauce, great vegetarian vegetables dishes with artisjokes, fennel, lentils and chick peas, fresh herbs and green and black olives
Serving Temperature: 10-12c when aged 14c, medium or big sized white wine glass. drink now and decant min. 1 hour before serving or keep until 2028-2033
