Started just 3 years ago Maya Sallée and Nicolas Fernandez are young vinters couple who both studied agronomy and oenologie, they are changing with a few other great vinters the face of the Cahors region, all natural wines with freshness and ripe fruit, and the best expression of their great terroir.

Region: AOC, Cahors

Millésime: 2018

Grape variety and soil: 90% Malbec, 10% Merlot all hand picked Soil, Argiles rouges (red clay) on kimmeridge and marl underrock 340 m altitude

Taste: Modern styled and powerful Malbec, lots of black fruit, complex floral and mineral, pure expression of it’s terroir, great fine tannins, long aftertaste

Wine pairing: red meats, stews (beef, lamb or game) magret and confit de canard, pigeon, cheeses

Serving Temperature: 16 c, big sized red wine glass type Burgundy. if possible decant before drinking, Drink now until 2028

Vinification: Natural vinification slow and long maceration 15/30 days, local yeasts on concrete and stainless steel tanks, riping on it’s lies for a few months, no filtering or fining  low in sulphite <25mg/l only 1mg added before botteling alcohol content: 14%

Culture: In conversion to be Organic, label AB, biodynamic farming and natural wine making
