Description
Started just 3 years ago Maya Sallée and Nicolas Fernandez are young vinters couple who both studied agronomy and oenologie, they are changing with a few other great vinters the face of the Cahors region, all natural wines with freshness and ripe fruit, and the best expression of their great terroir.
Region: Vin de France, Cahors
Grape variety and soil: 100% Malbec handpicked Soil, Argilo Calcaire (Clay with Limestone) Kimmeridge undercook on a height of 340 meters
Taste: Modern styled and powerful Malbec, lots of black fruit, complex floral and mineral, pure expression of it’s terroir, great fine tannins, long aftertaste
Wine pairing: Red meats, stews (beef, lamb or game) magret and confit de canard, pigeon, cheeses
Serving Temperature: 15-16°C, in a medium or large burgundy style red wine glass. Decant before drinking, drink now or keep until 2026
Vinification: Natural vinification with indigenous yeasts, slow and long maceration 15/30 days. Riping on it’s lies for a few months, no filtering or fining. Alcohol content: 13%. no added sulphites Total SO2<20mmg
