Started just 3 years ago Maya Sallée and Nicolas Fernandez are young vinters couple who both studied agronomy and oenologie, they are changing with a few other great vinters the face of the Cahors region, all natural wines with freshness and ripe fruit, and the best expression of their great terroir
Region: Vin de France, Cahors
Grape variety and soil: 100% Malbec handpicked Soil, Argilo Calcaire (Clay with Limestone) Kimmeridge undercook on a height of 340 meters
Taste: A rich, deep and well-structured but elegant wine with lots of black fruits, complex, floral and mineral, pure expression of its terroir, large fine tannins, long finish
Wine pairing: Red meats, stews (beef, lamb or game), duck breast and confit, pigeon, game and mature cheeses
Serving Temperature: 16-17°C, in a large Burgundy or Bordeaux type red wine glass. If possible decant before drinking, Drink now until 2035+
Vinification: Natural vinification with slow and long maceration for more than a month, local yeasts on maturation in old 600-litre barrels, no filtration or fining. Alcohol content: 13%. no added sulphites Total SO2<20mg
