Started just 3 years ago Maya Sallée and Nicolas Fernandez are young vinters couple who both studied agronomy and oenologie, they are changing with a few other great vinters the face of the Cahors region, all natural wines with freshness and ripe fruit, and the best expression of their great terroir.
Region: Sud-Ouest, Vin de France, Cahors
Grape variety and soil: 70% Malbec, 30% Merlot Soil, Argilo Calcaire (Clay with Limestone) on kimmeridge and marl underrock 340 m altitude
Taste: This is an easy drinking natural wine (Glou Glou) with some power, freshness, ripe dark plums and berry’s and complexity, fine and pure lingering aftertaste low and soft tannin
Wine pairing: For every occassion, red and white meats, charcuterie and to impress your girl or boyfriend.
Serving Temperature: 16 c, medium or big sized red wine glass type Burgundy. if possible decant before drinking, Drink now until 2023-2024
Vinification: Natural vinification (half with whole bunch fermentation, local yeasts soft extraction on concrete and stainless steel tanks, riping on it’s lies for a few months, no filtering or fining low in sulphite SO2 total 15mg/l,only 1mg added before botteling alcohol content: 13%
Culture: Organic, label AB, biodynamic (in Conversion Demeter) farming and natural wine making
