The young couple Sylvain Ohayon (wine maker) and Aude Duval (former Caviste) arrived in 2017 on this wine estate in the Montravel area, Bergerac. Organic culture with Biodynamic approach. Great quality but only small quantities

Grape variety and soil: 50% Sémillon 30% Cabernet Franc 20% Cabernet Sauvignon, all hand picked Soil: Argilo Calcaire on a Limestone bedrock 80 m altitude, Port de Sainte Foy, prolongation of the plateau of Saint Emilion
Taste:This Blanc de Noir or very pale rose, is very fine, soft but dry, complex with a lots of fruit, like pairs combined with raspberries, some orange peel and cassis nice length
Wine pairing: Gastronomic wine, aperitif, salads, fish and white meats, cheeses
Serving Temperature: 11-13°C, medium or big sized white wine glass. Drink now, better to decant, or keep until 2025
Vinification: Natural vinification, local yeasts, in old used barriques 6-7 months. Not filtered or fined. 1,5 mg of sulpites added before botteling. Alcohol content: 12%. SO2 total<30mg
