Romuald Cousy, Domaine Ambitio and Vincent Alexis from Château Barouillet, are working together on this project named Gaules de Bois, to obtain the best biodynamic grapes from other winemakers in Bergerac / Duras or other regions. They produce fantastic original and creative wines

Region: Vin de France, Bergerac

Grape variety and soil: 100% Sauvignon Blanc, soil: Argilo Calcaire

Taste: This coper orange colored wine in a oxidative style is very rich and powerful, with high complexity. cloves, wet abricots, blood oranges, dried fruits, bee wax, ripe and sweet in the nose but dry in taste, great length and balanced with some nice tannins, and some fine gout de Petrol like a great riesling

Wine pairing: Foie gras, Peking duck, Asian spicy food, dishes with saffron sauces, powerful ripened cheeses, on it’s own as an aperitif or a meditation wine

Serving Temperature: 12-14°C, medium or large burgundy type white wine glass. Drink now or keep until 2029+

Vinification: Natural vinification with local yeasts on amphora and one year on the skins, unfiltered or fined. No sulfites added. Alcohol content: 13.5% Total SO2 <25 mg
