In 2015, Charlotte and Louis Pérot left behind literary careers in Paris to rebuild a dilapidated farm in the South West of France with fruit trees, forests, sheep, goats, chickens, and old vines. 30km from Cahors. Louis and Charlotte are not doing anything flashy with their old-fashioned low-tech winemaking, but they are nailing the balance of fruit and texture in a great way. Their cave is dug into the limestone rock near their house where temperatures are perfect for the wines

Region: Vin de France (Cahors)

Grape variety and soil: Hybrid grapes, Chambourcin Soil, Argilo Calcaire (Clay with Limestone)

Taste: Rustic and black cherry, red fruit, herbaceous notes, black pepper, and even chocolate. Acidity with modest tannins. A wine with a light medium body

Wine pairing: South West cuisine, cassoulet, confit de canard and Toulouse sausages

Serving Temperature: 14-16°C, medium or big sized red wine glass type Bourgogne. Open 2 hours in advance or decant before serving, drink now or keep until 2029

Vinification: Natural vinification, soft maturation with local yeasts on vats. Not filtered or fined, no sulfites added Alcohol content: 11% SO2 total<10mg
