Grape variety and soil: 100% chardonnay Soil: Argilo-calcaire, silica with some slate
Taste: Great and natural expression of the Chardonnay grape (no oak), subtle white fruits and flowers, citrus like tangerine, rich and elegant with great acidity, fluid and juicy, mineral taste and aftertaste
Wine pairing: Shellfish and oysters, white meats, fish and cheeses
Serving Temperature: 11-12°C medium or big sized white wine glass Burgundy styled. When drinking now better to decant 1 hour in advance, can keep until 2025+
Vinification: Natural vinification local yeasts, partial with their skins on vats, riping on it’s fine lees for min. 6-12 months. Not filtered or fined. No sulfites added. Alcohol content: 14% SO2 total<25mg
