Vinification: Harvesting the grapes at maximum ripeness, thermo controled fermentation at 28 c for 8 days on stainless steel, with remontage 3 times a day. Post fermentation for 12 days with ecoulage. Soutirage (pumping up the must) every 2 months, total riping for 6 months before bottling. Alcohol content: 13,5%
