Independent winemaker Patrice Colin who, with his son Pierre François, cultivates 25 hectares of vines in Thoré-la-Rochette in the Coteaux Vendômois near le Loir, a northern tributary of the Loire. Certified Organic since 2008 and Biodynamic since 2020 (Demeter). Here the best of the terroir and the local grape varieties Pineau d’Aunis and Chenin Blanc. All the wines are very fine and gastronomic with a beautiful minerality, and little or no intervention during the vinification with extreme precision. The wines mature in the troglodyte cellars typical of the region

Region: AOC Coteaux Vendômois (Loire)

Grape variety and soil: 65% Pineau d’ Aunis, 20% Pinot Noir, 15% Gamay Soil, Clay with Flintstones, with limestone bedrock

Taste: Very open nose with sour cherries and ripe raspberries, crushed ground pepper, deep and mineral, in the mouth juicy and again that nice ripe fruit, nice acidity, structure with a nice spicy length

Wine pairing: Charcuterie, firm fish dishes like monkfish and cod, asian kitchen, white meats like porc and veal, farmer chicken and cheeses

Serving Temperature: 12-14°C, medium or big sized red wine glass type Bourgogne. Open 1 hour in advance or decant before serving, drink now or keep until 2026

Vinification: Natural vinification, short and soft maceration with local yeasts on vats. Not filtered or fined, no sulfites added Alcohol content: 12,5%, very low quantity of sulfite added SO2 total<70mg (Demeter)
